Japanese Style Pickles (Quick)
1/2 cup water
1/2 cup vinegar
1/2 tsp salt
1 tsp sugar
1 garlic clove crushed
1 whole chilli split
1 piece star anise (optional)
250g finely sliced or shredded vegetable of choice (carrot, cabbage, red or white onion, cucumber etc.)
Put prepared vegetables in a bowl.
Put all other ingredients in a pot and bring to a boil. Simmer for 1 minute then pour over vegetables.
Cover with a lid or clingfilm and leave to sit for 10 minutes.
Store in fridge.
That's all folks! Quick easy and very tasty accompaniment.
