Honey & Lemon Dressing


Ingredients:

2 tbsp fresh squeezed lemon juice
6 tbsp extra virgin olive oil (pressed rapeseed oil is a great alternative)
2 tbsp honey (preferably clear but it's up to your taste so experiment)
1 tsp English mustard (Dijon does the trick too)
Salt and fresh ground black pepper to taste

Put all ingredients in a jug and blend with a stick blender or whisk till emulsified.
This makes a lovely summery dressing to go with fish, chicken or even a simple leaf salad.
