Fluffy, Light Marshmallows


Egg-free, Gluten-free, can be made Vegan

Ingredients

5 gelatin sheets (or substitute agar-agar for vegan option)
300ml (1/2 pint) water, divided 
400g (14 oz) caster sugar
1/2 tsp Vanilla
2 drops pink food coloring (optional)
Cornflour for dusting

Preparation method
Prep: 10 min |Cook: 10 min

In the mixer bowl, stir together gelatin, vanilla and 150ml water, also food colouring if using.

In a saucepan, combine sugar and the remaining 150ml water, over low heat. Stir to dissolve sugar then allow to simmer till reaching 115 deg C.

Start the mixer and slowly pour the sugar syrup into the gelatin. Whisk on high speed with electric mixer for 10 minutes until foamy and tripled in volume. 
Pour into a lightly greased and dusted with cornflour Swiss roll tin and level with a spatula. Allow to set somewhere cool. 
Cut into squares dusting liberally with cornflour, then sieve off excess. 
Store in an airtight container or Kilner jar (though I doubt for long).
