Crunchy Oat Clusters (Granola)
Oat cluster cereal is one of my favourites as it can be eaten as a snack, breakfast, or crunchy topping on desserts. Cereals cost around £2-£3 for a 500g box while porridge can be found for less than 50 pence a kilo. So I came up with this recipe that works is easy and cheap.
Base Recipe
- 300 g of Porridge
- 3 tbsp sugar (brown is best but use what you like)
- 60 ml sunflower oil
- 80 ml Sugar syrup* for vegan or honey, maple syrup or golden syrup can be used
- Pinch salt
- 1 tsp vanilla
Pop all the ingredients in a bowl or electric mixer and mix well till it forms sticky clumps but all moisture has been absorbed.
Line a baking sheet or tray with parchment then take a handful of the mixture squeezing it slightly into the clumps you desire, alternatively dump the whole lot out, press down then roughly chop up with the edge of a spoon.
Bake in the oven for 30-40 minutes till golden brown then remove and allow to cool completely before putting in an airtight container.
Alternative Recipe
As above but in the mixing stage add 1 cup total of dried fruit, nuts, seeds, coconut or anything you fancy.
* Sugar Syrup is an easy replacement for more expensive syrups and can be flavoured. It is made by putting equal quantities of sugar and water in a pot, and bring to a boil. Simmer for 2-3 minutes to make sure the sugar is dissolved. Then allow to cool and pour into a jar and store in the fridge.
