Greek style yoghurt, sunflower seed and garlic pasta
I've been making yoghurt a lot recently as my local Farmfoods has fresh whole milk for Ā£1 for 2lt.
So I came up with this recipe based on a Greek pasta sauce recipe and added the sunflower seeds that I love.
Ingredients (2 regular portions)
250g Pasta of your choosing
3-4 tbsp hulled sunflower seeds (grind in a mortar and pestle or with the side of a heavy knife)
2 cloves of garlic sliced or finely chopped
150-250g plain yoghurt (depends on how saucy you like pasta)
Olive oil
Butter
Salt & pepper to taste
Chilli to taste optional
Grated lemon zest to garnish
In a large pot of salted boiling water cook your pasta to your liking.
Drain once ready and reserve half a cup of the cooking water.
Take the same now empty pot and pot back on a low to medium heat.
Add the sunflower seeds and stir continuously till they are toasted and golden.
Add the garlic (and chilli if using) and a generous glug of olive oil and cook till the garlic starts to go golden.
Now add the reserved water, a knob of butter and the drained pasta.
Stir well then add the yoghurt and sunflower seeds, season to taste and stir to combine for 1-2 minutes.
Remove from heat, serve and top with a grating of lemon zest.
