Italian Beer - Recipe



 One of my allotment neighbours is growing some barley this season with the intent of making some beer so I thought I'd post this recipe. It's tried and tested and produces a refreshing 'Moretti' style beer. 



First, prepare the barley in advance in the recipe for Full Roast Barley Coffee.

Water 5 litres
Dry Hops  18 g
Oat flakes (Porridge) 150 g


In a large pot bring all of the above ingredients to a boil for 1 hour adding oats after 30 mins

Sugar 600 g
Barley powder 20 g (from earlier preparation)


Strain the liquid onto the sugar and barley powder (barley coffee mixed with a little cold water)

Yeast 1 tsp

Allow to cool below 30 deg then add yeast. Stir vigorously to aerate then airlock to ferment out 7-10 days.

Rack off to another demi-john and replace airlock to clear for around 2-3 weeks.

Siphon off into chosen bottles and prime with sugar (1tsp per litre bottle).
Cap tightly and leave at room temperature for a month to carbonate (get fizzy).

Store somewhere cool and dark and refrigerate before serving.
