Easy Falafel (vegan)

 

This is an excellent quickie recipe if you have a can of chickpeas in the pantry. You can also make variants depending on your available cans: kidney beans, marrowfat peas, lentils, butterbeans, etc.




Ingredients:


    * 400g can of chickpeas or garbanzo beans.
    * 1 large onion, chopped
    * 2 cloves of garlic, chopped
    * 3 tablespoons of fresh parsley, chopped 
    * 1 tsp coriander
    * 1 tsp cumin
    * 2 tablespoons flour
    * Salt
    * Pepper

    * Oil for frying

Preparation:

Combine drained chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in a medium bowl. Add flour.

Mash chickpeas, ensuring to mix all the ingredients together. You can also combine ingredients in a food processor. You want the result to be a thick paste.

Form the mixture into small balls, about the size of a ping pong ball. Slightly flatten.

Fry in 2 inches of oil at 170-180 c until golden brown (5-7 minutes). Drain on paper and serve with a dip of your choice.
