Thick Oatcakes (no mess, easy/vegan)
I have always loved oatcakes and my favourites are Stockan's of Orkney Thick Oatcakes. So I came up with this using oil instead of other fats, making it vegan and more economical.
Ingredients:
250g Porridge oats
1/2 tsp sea salt
1/2 tsp bicarbonate of soda
20g vegetable oil or oil of your choice
100g hot water (not boiling)
Preheat oven to 180 deg c.
Put all dry ingredients in a polythene bag and agitate to mix.
Add the oil and rub in to incorporate.
Pour in the water and massage the back to mix well.
Once it has formed a ball, twist the bag to expel the air and leave it to sit for 10 minutes.
Remove the ball and cut it in half forming it into two balls.
Place one on greaseproof paper or poly bag, cover with another sheet and roll to a 6-8 inch round. Then put on a baking sheet and score into quarters. Repeat with the second ball.
Bake in the oven for 15 to 20 minutes till the preferred colour is achieved.
Allow to cool completely then enjoy!
