Crazy simple Vegan lemon curd!



I had the urge for lemon curd yesterday but no lemons or eggs so came up with this, using ingredients I had.


1/4 cup flour
4 tbsp vegetable oil (or any neutral oil)
1 cup vegan sugar (or sugar of choice)
2 cup water (replace 3/4 cup with real lemon juice if you have it)
pinch salt
1/4tsp turmeric
2 tsp citric acid

Method

Put flour and oil in a small saucepan and stir well to combine into a smooth paste. Then add all other ingredients.
Place on medium heat and stir constantly till reaching a boil. Reduce heat and simmer for 5 minutes as it thickens.
Pour into a couple of jars, lid and allow to cool. May seem a bit thin when hot but thickens up once cold.
Zingy, sweet and great on toast!
